Seven Years Old!

Can’t really call the blog seven years old thought because I haven’t posted since 2013. Life has a way of going along and sometimes it doesn’t give you a chance to pause and catch up on all your social media. Especially blogs. They are pretty time-consuming. But maybe I can do a better job of keeping up on things.

cooking ahead

sometimes on sundays or mondays (if i’m not working) i cook up foods to keep in the fridge to make packing lunches quick and easy (and brainless!)

image oct 7 1today i cooked spelt berries, wheat berries & a kamut/orzo/mirepoix combo. only the kamut/orzo has seasonings. the spelt & wheat berries are plain so we can put whatever vinaigrette on them. or heat them in a pan and add seasonings.

also baked up a block of extra firm tofu:

drain/press, slice 1/4 inch,
put on baking sheet with olive oil, balsamic vinegar & trader joe’s 21 seasoning salute.
20 minutes @ 350 then flip.
20 more minutes @ 300 then turn the oven off and let rest in there for about a half hour.
if you want the tofu a little drier you can transfer the slices to a rack for the resting time but it’s not necessary.  if you don’t have sodium restrictions you might want to add some kosher salt to the tofu after you flip it. i plan to put these slices on salad and i always salt/pepper my greens when i pack my salad up for lunch so i didn’t bake with salt.

making thank you cards in bulk is fun. you can use the same color scheme and different bits and bobs to make them each different. or make them all the same because they are going to different people all over the place! this card was just sent to cincinnati!

so very lucky

This is a thank you card I made for my daughter to send to very dear friends as a thank you for her birthday gift. Love this paper and how it looks like vinyl!

Whipped up a few cards to send to family along with school and tennis pictures. I have LOTS of half-circles left over so I can make more!

first day of school!

this morning my daughter headed off to her first day of 8th grade. hard to believe. and even though i had the WHOLE summer to compose a lunch note, i failed to enclose one in her lunch. not even a scribbled “love you” on torn paper! but i did bake her Trader Joe’s Chocolate Croissants for breakfast and made an iced vanilla coffee with heart-shaped coffee ice cubes to go along with!

fleas begone!

we are trying (and have been for several weeks) to rid our home and cats of fleas. on top of vacuuming almost every day, i’ve tried the holistic route using diatomaceous earth, feeding them brewer’s yeast and zinc and that has helped a little but  the DE makes quite a mess through the house: it looks like a talcum powder bottle exploded! we have bathed the kittens several times in Dawn and that gets some of the fleas but not all. most websites discourage flea collars because they are just a ring of poison around your cat’s neck. but we tried them anyway. there were fleas UNDER the collars! so we broke down and bought some of this:

and guess what? it doesn’t work either. i know fleas are super bad this season but it makes me sad to see my kitties with scabby necks and being itchy and it makes me mad to spend $18 on a product that is supposed to kill fleas within 15 minutes but there are still FLEAS RIGHT WHERE THE PRODUCT WAS APPLIED! our 2 kittens are heading to the vet to be spayed/neutered on Thursday and it’s embarrassing to have to take them in with all these bugs. i guess we’ll just keep on with the DE and the vacuuming and the combing and the hand-picking (which is pretty tricky with kittens!) until we get a hard freeze and i can send them outside!
